
Co-founder of Black Salt & KOKUM London, Simeron’s passion for restaurants began at a very young age. At around the age of 6, she would construct fantasy restaurants using gym mats and cushions at home. Her toy ironing board served as the reception desk, and she would demand outrageous prices for a glass of orange juice. Despite having multiple dietary restrictions, her exposure to food through her father, helped her develop a love food and restaurants. This foundation has significantly influenced her work at KOKUM, an Indian restaurant in Dulwich.

Co-founder of Dastaan, Black Salt, and KOKUM London, Sanjay has had an illustrious career in the culinary world before starting his own ventures. His journey began in Dubai where he worked with Angela Hartnett, who later brought him to London to work at Murano. With experience as an executive pastry chef in several renowned restaurants and hotels, Sanjay eventually ventured into Indian cuisine, leading to a remarkable Indian dining experience.
